Fire and grease exhaust safety in cloud kitchens
· Updated · Slinai
Key facts
| Watches | Hot line, hood, and extraction zone — unattended heat and grease-risk patterns |
|---|---|
| Does not replace | Suppression, gas detection, extinguishers, or the fire NOC |
| Alert | Clip to the on-site shift lead, separate from SLA chats |
| Camera | One job: hood and burners. Not the bag table |
| Solution | Safety & compliance |
A hood fire does not wait for the end-of-shift video review.
This post is heat and extraction on existing CCTV. It is not kitchen hygiene, not order-to-bag SLA, and not a manufacturing PPE check. Slinai escalates a clip under safety & compliance. Hub: cloud kitchens.

What the camera is allowed to claim
| Visible | Device you still need |
|---|---|
| Smoke or flame leaving the pan and not clearing | Suppression and an extinguisher |
| Hood running with heavy smoke sitting under it | A technician for the fan, not a model |
| Burner on, nobody in the polygon | A human to walk now |
| Gas smell or a leak | A gas detector — video will not see it |
Write that last row into the SOP. An alert product that implies it “does fire” will be blamed for a leak it cannot see.

Camera and false alarms
- Frame the hood and the line, slightly high, so steam is not the entire image.
- Exclude the doorway. People walking through will look like “unattended” if the polygon is the whole room.
- Tune on a real dinner, including the hour the hood is dirty. A clean-hood demo will scream on Friday.
- Security still applies: who can export a clip of staff at the burners, and that export is logged.
Manufacturing PPE is the plant cousin of “safety on existing cameras.” Do not copy helmet rules onto a cook line.

How this ties to Slinai
- Safety & compliance
- Agentic: “Any hood alerts at Hub 2 last night?” — grounded clips only
- Book a demo on the hot-line camera you would want a shift lead to trust
Common questions
Does video detect a gas leak?
No. Gas needs a detector. Video sees flame where it should not be, a hood that is not clearing smoke, and a line left unattended at high heat.
Will this replace the Ansul or suppression system?
No. Suppression is the last device. This alert is earlier: a person still has time to shut the burner and call it in.
Is this the same as PPE or FSSAI hygiene?
No. Hairnets and gloves are the restaurant hygiene guide. This post is heat, grease, and extraction only.
What camera works?
A stable view of the hood and the burners, not a fisheye of the whole hub. Steam and glare need a UAT week before you trust the threshold.
Who should get the alert?
The shift lead on site, then a safety number. Do not drop fire clips into the late-order WhatsApp group.
