Cold storage ingredient compliance in cloud kitchens

Cloud kitchen cold storage ingredient compliance — door discipline and handling-window alert on existing CCTV

Key facts

Visual jobs Door-open dwell, time-outside-zone on the path to prep, after-hours walk-in entry
Logger’s job Temperature and humidity — video does not replace it
Not this post Grocery FEFO rotation — see the dark-store cold-chain guide
Two thresholds Short pull vs stocking walk, or every receipt becomes an incident
Solution Safety & compliance

The logger says the walk-in warmed up. It does not say the door was propped for a veg delivery or a tray of protein sat on a prep shelf for twenty minutes.

This is ingredient handling, not dark-store FEFO and not order-to-bag lateness. Slinai uses existing CCTV under safety & compliance. Hub: cloud kitchens.

Cold-room door discipline — grocery cousin of a cloud kitchen walk-in, different SOP
Same door physics. A grocery pick and a cook’s protein pull are not the same alert.

Two clocks inside one walk-in

EventHonest thresholdFalse alarm
Single ingredient pullDoor open for a short windowFiring because someone reached for one tray
Stocking / inwardA longer allowed window, named as stockingTreating a delivery as theft or neglect
Tray dwell in the aisleMinutes outside the zone on the path to the stationCounting a tray that is in frame but still inside the room
After-hours entryAny open when the hub is closedA cleaner on a known roster — suppress that window

If you only have one threshold, the team will mute the chat on the first inwarding.

Ingredient landing on a cloud kitchen prep station after a cold-room pull
The unsafe minute is often outside the room, on the way to the line.

Camera placement

  • Door: see the gap and the person, not only the inside of the room.
  • Path: one view of the landing shelf where trays wait.
  • Do not ask the walk-in camera to also judge station throughput.

Pair every temperature exception from the logger with the door clip from the same minute. That is the stand-up. A clip with no degree, or a degree with no clip, is half a story.

Restricted ingredient zone in a cloud kitchen — security sibling of cold-storage compliance
A propped door can be spoilage or an open store. Split compliance and loss so the chef and security are not in one noisy thread.

How this ties to Slinai

Common questions

Does the camera measure temperature?

No. The logger or BMS measures degrees. Video shows who left the door open and how long a tray sat outside. Use both.

How is this different from dark-store cold chain?

Dark stores watch grocery cold rooms and FEFO shelf rotation. A cloud kitchen watches ingredient pulls onto a cook line. Different polygons, different SOP.

Is a long door open always a violation?

No. A stocking walk is longer than a single pull. Write two thresholds or the alert will fire on every delivery.

Can it see expiry dates?

Not reliably on a crowded walk-in. Expiry discipline stays a label and a process. Video supports door and dwell.

Who gets the clip?

The hub lead or the chef on shift. Do not mix it with late-bag SLA alerts.
