Kitchen hygiene and FSSAI video analytics for restaurant chains
· Updated · Slinai
Key facts
| What it watches | Hairnet / beard cover, gloves, wash-station use, cross-contamination zones |
|---|---|
| Output | Clip-backed WhatsApp to chef / food-safety lead; audit log of exceptions |
| How to prove it | Count hygiene flags per shift in week one, then compare after chefs have acted on them for a month |
| Legal | Evidence layer, not a substitute for FSSAI licence or training |
| Solution | Safety & compliance |
FSSAI is non-negotiable for Indian dining and QSR. Periodic audits still only photograph one Tuesday.
This post is the hygiene layer: PPE and wash discipline on existing kitchen cameras. Food-handling sequence (raw vs cooked, expo) is covered on the industry hub. Slinai implements both under safety & compliance. Hub: restaurants & QSR video analytics.

What “FSSAI-aligned” means on a camera
Pixels do not issue a licence. They can show whether the SOP you wrote is happening:
- Hairnet / beard cover in the cook line.
- Gloves at the agreed stations (not “gloves forever” if your SOP says otherwise).
- Presence at a wash station after a raw-handling zone.
- People crossing a marked raw / ready line.
If the SOP is not written, the model will argue with the chef. Write it first.

Evidence packs, not shame boards
The useful artefact is date, zone, clip, close-out. The useless artefact is a public leaderboard of named cooks.
Slinai verifies events before WhatsApp so a mop bucket is not a “glove incident.” Still: humans close the ticket. Auto-punish from a score is how you get cameras covered with tape.
Improvement is a programme outcome when chefs actually walk, not a brochure guarantee. Count flags per shift in week one and compare after a month.

First cameras
- Cook line / expo (PPE in frame).
- Wash station if it is a real SOP.
- Prep table if cross-contact is the board issue.
Do not start with the dining-room dome. Table turn-time is a different job.
Delivery-only sites: same hygiene, different clock — see cloud kitchen order-to-bag SLA.
How this ties to Slinai
- Safety & compliance
- Agentic questions: “Which kitchen missed hairnet SOP yesterday?”
- Cluster: turn-time, POS billing, aggregator
Book a demo on the camera your auditor already looks at. Bring the written PPE SOP, not a verbal “we always wear them.”
Common questions
Does this replace an FSSAI audit?
No. Inspectors still inspect. You arrive with a month of exception clips and close-out notes instead of a binder from the last visit.
Is this the same as kitchen SOP / food-handling?
Related. SOP is raw-vs-cooked, expo sequence, unmanned prep. This post is PPE and hygiene stations — the licence-shaped layer.
Do we identify cooks?
No. Slinai flags the miss and the zone. HR process is yours. Facial recognition is off by default.
What if the wash station is off-camera?
Move or add a view. Analytics cannot invent a sink. That is facilities, not a model problem.
Cloud kitchen or dining kitchen?
Same hygiene idea. Delivery-only hubs should also read the cloud-kitchen order-to-bag guide — different SLA, same hairnet.
